Cups to Grams: Why Weighing Beats Measuring

A cup is a measure of volume. Flour is sold by weight. That mismatch is why the same recipe gives you a different result every time, and why serious bakers quietly abandoned cups years ago.

A cup measures how much space something takes up. A gram measures how much of it there is. For a liquid the two track together, so a cup of water is reliably 236 grams. For anything that can be packed, settled, sifted, or scooped differently, they come apart, and baking is almost entirely made of those things.

Why a cup of flour is not a fixed weight

Scoop flour straight from the bag with your cup and you compress it, packing more in. Spoon it in gently and level it off and you get less. The gap between those two methods is routinely 20% or more on the same measuring cup. On a loaf of bread, 20% more flour is the difference between a tender crumb and a brick.

Notice sugar and butter barely move: they are dense and do not trap air, so volume and weight stay in step. Flour and cocoa swing widely because they are light and compressible. This is exactly why a recipe can work perfectly for its author and fail for you: you scooped where they spooned.

The conversions worth memorising

  • Water and milk: 1 cup = about 236 g (liquids convert cleanly).
  • All-purpose flour: 1 cup = 120 g (spooned and levelled, the recipe standard).
  • Granulated sugar: 1 cup = 200 g.
  • Butter: 1 stick = 113 g = half a cup.
  • 1 ounce = 28.35 g, which is where the awkward numbers come from.

There is no universal factor: each ingredient has its own density, which is the entire point.

Why grams fix the problem

A digital scale removes every source of variation at once. There is no scoop-versus-spoon, no settling, no "how full is a heaped tablespoon". You put the bowl on the scale, zero it, and add flour until it reads 120. It reads 120 for you, for the recipe author, and for anyone else, which is why professional and published recipes increasingly lead with weights.

When cups are fine

Cooking, as opposed to baking, is forgiving. A stew does not care whether your cup of stock is 230 or 245 grams. Cups are quick and perfectly adequate for anything you taste and adjust as you go. Reserve the scale for baking, candy, and anything where the chemistry depends on ratios holding exactly, which is precisely where volume measures let you down.

How many grams is a cup of flour?

The recipe standard is 120 grams for all-purpose flour, spooned into the cup and levelled off. If you scoop straight from the bag you will get closer to 150 grams, which is the main reason baking recipes fail to reproduce.

Why do conversion charts disagree with each other?

Because a cup is a volume and every ingredient has a different density, so there is no single cups-to-grams number. Charts also differ on whether they assume scooped or spooned flour. Weighing sidesteps the disagreement entirely.

Do I really need a kitchen scale?

For cooking, no. For baking, it is the single cheapest upgrade to consistency you can make. It removes the largest source of variation in the whole process and makes any recipe repeatable.
